PASTA LUNGA AND PASTA RIPIENA
Few foods are as closely associated with Italian cooking as filled pasta.
Known in Italy as pasta ripiena, these are pastas that enclose a filling within a thin sheet of dough. From tortellini and tortelloni to cappelletti and ravioli, each shape tells the story of a region, a family tradition, and a way of eating that has been passed from one generation to the next.
At Rustichella, pasta ripiena is at the heart of what we do.
What Is Pasta Ripiena?
The Italian expression pasta ripiena simply means “filled pasta”.
Unlike long pasta such as tagliatelle, spaghetti or pappardelle, pasta ripiena contains a filling that is carefully enclosed within the dough. Depending on the region, fillings may include fresh ricotta, Parmigiano Reggiano, seasonal vegetables, braised meats, seafood, herbs, or combinations developed over centuries.
Every region of Italy has its own traditions, shapes and recipes.
The Emilia-Romagna Tradition
Rustichella draws its inspiration from Emilia-Romagna, a region widely regarded as one of Italy’s great pasta capitals.
Here, filled pasta is part of everyday life. Tortellini are folded by hand according to traditions that have endured for generations. Tortelloni are generously filled and served with simple sauces that allow the pasta itself to shine. In cities such as Bologna, Modena and Ferrara, pasta ripiena remains an essential part of family gatherings, celebrations and Sunday lunches.
Our owners grew up in Emilia-Romagna and continue to prepare many of these dishes according to the traditions they learned there.
Handmade Daily
Every piece of pasta ripiena begins with fresh dough prepared in-house.
The dough is rolled, filled, folded and shaped by hand. This process takes time and attention, but it is fundamental to achieving the delicate balance between pasta and filling that defines great pasta ripiena.
The result is pasta with texture, character and a clear sense of place.
Types of Pasta Ripiena We Serve
Our menu changes throughout the year, but examples of pasta ripiena may include:
- Tortellini
- Tortelloni
- Balanzoni
- Seasonal ravioli
- Regional filled pasta specialties from Emilia-Romagna
Some fillings celebrate local Australian produce, while others remain faithful to recipes found throughout Northern Italy.
More Than Ravioli
Outside Italy, ravioli is often the best-known example of filled pasta. In reality, pasta ripiena encompasses dozens of shapes, techniques and regional traditions.
Each shape has a purpose. Each filling has a history. Each recipe reflects the culture and ingredients of the place where it originated.
Exploring pasta ripiena is one of the most rewarding ways to discover the diversity of Italian regional cuisine.
